I have to start with Sage and Onion Stuffing. Traditional and incredibly simple, full of flavour and wholesale MLB jerseys memories.
2 Large Onions
4-5 Fresh Sage Leaves (or 2 tsps of dried sage)

4 oz Breadcrumbs
Pinch of Salt

1 lb of peeled Chestnuts
1 small Onion – finely diced
2 oz Unsmoked Bacon
1 oz Butter
4 oz Breadcrumbs
1 tsp Chopped Parsley
A little Grated Lemon Rind
Seasoning to taste
Fry a knob of stuffing in a Учение little butter, taste and adjust the seasoning if necessary.
This stuffing can be baked in a dish, or rolled into balls that will be crisp on the outside and moist inside.
To bake, press the stuffing into a greased ovenproof dish in a layer that is around 4cm thick. Bake at 190 degree centigrade for about 40 minutes, until browned.
Alternatively, roll into balls that are about 4cm in diameter. Roast marketing the stuffing balls in hot fat (they can be tucked around the turkey or done in a roasting tin of their own) for 30-40 minutes, until crisp and nicely browned on the outside.
Celery Stuffing is an unusual alternative – or extra – at the Christmas Table.
4 oz Chopped Celery
2 tsp Chopped Basil
5 oz Breadcrumbs
2 tsps Chopped Onion
2 oz Olive Oil
Grated WINE Rind and Juice of One Lemon
Extra Olive Oil for frying
Fry the Celery in the oil.
Add the other ingredients and mix well, using as much lemon juice as needed to bind everything together.
Use to stuff any roasting bird.
This stuffing is great with fish too. Simply press the mix into the cavity of any fish which is to be cooked and served whole.
Alternatively pan fry the stuffing balls in hot fat LAP for 30-40 minutes, until crisp and nicely browned on the outside.
